做法:春笋切成片后(hòu )加少许(xǔ )盐捞出(chū )后用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后(hòu )转(zhuǎn )中(zhōng )火。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅(guō )盖(gài )焖。
