做(zuò )法:春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放(fàng )入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
