做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半(bàn )掩(yǎn )住春笋(sǔn ),盖上锅(guō )盖大火煮开后(hòu )转中火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
