做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬(áo )干的时(shí )候(hòu )加(jiā )入(rù )盐,翻(fān )炒均(jun1 )匀稍收汁时盖(gài )上锅盖(gài )焖。
