做法(fǎ ):春笋切成(chéng )片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再加入(rù )生(shēng )抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的(de )时(shí )候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
