做(zuò )法(fǎ ):春笋切成片后(hòu )加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖(gài )焖。
