做法(fǎ ):春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖(gài )大火(huǒ )煮开后转中火(huǒ )。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
