做(zuò )法(fǎ ):春笋切成片后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻(fān )炒均(jun1 )匀,加入(rù )少量(liàng )清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的(de )时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅(guō )盖焖。
