做法(fǎ ):春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再(zài )加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到水(shuǐ )快熬干(gàn )的时候加入(rù )盐,翻(fān )炒(chǎo )均匀稍收汁时盖(gài )上锅盖焖。
