做法(fǎ ):春笋切成(chéng )片后(hòu )加(jiā )少许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍(shāo )收汁(zhī )时(shí )盖上锅盖焖。
