做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的(de )时候加入(rù )盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
