做法:春(chūn )笋(sǔn )切成片后加少许盐捞出(chū )后用(yòng )清(qīng )水浸泡,生(shēng )姜切片,葱(cōng )切成(chéng )段。锅(guō )烧热,倒(dǎo )入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
