做法:春笋切成片后(hòu )加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放(fàng )入生姜(jiāng )、春(chūn )笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住(zhù )春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快(kuài )熬(áo )干的时(shí )候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
