做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅(guō )盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
