做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧(shāo )热,倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住(zhù )春笋,盖(gài )上锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
