做法:春(chūn )笋切成片后加(jiā )少许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成(chéng )段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
