做法:春笋切(qiē )成片后加少许盐(yán )捞(lāo )出后用(yòng )清水浸(jìn )泡(pào ),生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快(kuài )熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
