做(zuò )法:春笋切成片(piàn )后加(jiā )少许盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春(chūn )笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
