做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老(lǎo )抽、蚝油翻(fān )炒(chǎo )均匀(yún ),加(jiā )入少量(liàng )清水半掩住春(chūn )笋(sǔn ),盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
