做法:春笋切成片后加(jiā )少许(xǔ )盐捞(lāo )出后用清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅(guō )烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右(yòu )。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入(rù )盐(yán ),翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖。
