做法:春笋(sǔn )切成片后加少许盐捞出后(hòu )用清(qīng )水(shuǐ )浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
