做(zuò )法:春笋(sǔn )切成片(piàn )后加少许(xǔ )盐捞出后(hòu )用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
