做法:春笋切成片后加少许盐捞(lāo )出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量(liàng )清(qīng )水半掩(yǎn )住春(chūn )笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
