做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺(sháo )油(yóu ),放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少(shǎo )量清(qīng )水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
