做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水半(bàn )掩住春(chūn )笋(sǔn ),盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖上锅(guō )盖焖。
