做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅(guō )盖大火煮开(kāi )后(hòu )转中(zhōng )火。煮到水(shuǐ )快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时盖(gài )上锅盖焖。
