做法:春笋切(qiē )成片后加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒(chǎo )1分钟(zhōng )左(zuǒ )右(yòu )。再(zài )加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大(dà )火(huǒ )煮开后转中火(huǒ )。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
