做法(fǎ ):春(chūn )笋切成片后(hòu )加少许盐捞出后用(yòng )清水浸(jìn )泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛(niú )肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半(bàn )掩住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
