做(zuò )法:春笋(sǔn )切成片(piàn )后加少许盐(yán )捞出后用清(qīng )水(shuǐ )浸泡(pào ),生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
