做法(fǎ ):春(chūn )笋切成(chéng )片后加少许(xǔ )盐捞出后用(yòng )清水浸泡(pào ),生姜切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖(gài )大(dà )火煮开后转中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
