做法:春(chūn )笋切成片后加(jiā )少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右(yòu )。再(zài )加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖焖。
