做法:春笋(sǔn )切(qiē )成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上(shàng )锅(guō )盖大火煮开后(hòu )转中火。煮(zhǔ )到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
