做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅盖(gài )大(dà )火煮开后转中(zhōng )火。煮到水快(kuài )熬干(gàn )的时候加入(rù )盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖。
