做法:春(chūn )笋切成片后加(jiā )少许盐捞(lāo )出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右(yòu )。再(zài )加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后(hòu )转中火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
