做法:春(chūn )笋切(qiē )成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切(qiē )片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分(fèn )钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖。
