做(zuò )法(fǎ ):春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干(gàn )的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖(gài )焖。
