做法:春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量(liàng )清水半(bàn )掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
