做法:春笋切成(chéng )片后加少许盐捞出(chū )后用清水浸(jìn )泡(pào ),生(shēng )姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入(rù )少(shǎo )量清水半掩住春(chūn )笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖。
