做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒(dǎo )入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀(yún )稍收(shōu )汁(zhī )时(shí )盖上锅盖焖。
