做法:春(chūn )笋切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入(rù )少量清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
