做法(fǎ ):春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均(jun1 )匀,加入(rù )少(shǎo )量(liàng )清(qīng )水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快(kuài )熬干的(de )时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
