做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺(sháo )油(yóu ),放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒(chǎo )1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
