做法(fǎ ):春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少(shǎo )量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖(mèn )。
