做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖(gài )上锅盖大(dà )火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
