做法:春笋切(qiē )成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒入(rù )2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收汁时(shí )盖上(shàng )锅盖焖。
