做法:春笋切(qiē )成片后加少许盐(yán )捞(lāo )出后用清水浸泡(pào ),生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春(chūn )笋、牛(niú )肉片、葱(cōng )段翻炒1分钟(zhōng )左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时盖(gài )上(shàng )锅盖焖。
