做法(fǎ ):春笋切(qiē )成(chéng )片后(hòu )加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火(huǒ )。煮到(dào )水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
