做(zuò )法:春笋切成片后加(jiā )少许盐捞(lāo )出(chū )后用清(qīng )水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热(rè ),倒入(rù )2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
