做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入少(shǎo )量(liàng )清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅(guō )盖(gài )焖(mèn )。
