做法:春笋切成片后(hòu )加少许盐捞出(chū )后用清(qīng )水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生(shēng )姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
